    A former girls' boarding school on the Normandy coast, now a Michelin-starred boutique hotel-restaurant where the seafood-led menu tracks whatever the Manche gives up that day. Wild fish and shellfish arrive in delicately crafted form, and the kitchen pairs them with tea and sake as readily as wine, including a full Gong fu cha ceremony if you're curious. The chef's wife, a former prima ballerina, runs the front of house with the kind of calm that makes the whole place feel like a lucky secret.
