Tucked inside the old Galle Fort Hotel, Ropewalk is a cocktail bar built around arrack, Sri Lanka's indigenous palm-sap spirit. The menu leans into it hard, pairing arrack with Lion Stout reductions, balsamic shrubs, chilli, lemongrass, the works.
