The sharp smell of vinegar hitting the air signals the start of service at this 14-seat omakase counter in Coral Gables, where chef Shingo Akikuni holds a Michelin star. Fish comes almost entirely from Japan, each piece dressed with little more than a swipe of nikiri. Fourteen seats sounds intimate until you notice the team switching sides mid-meal without missing a beat, running the room like it's half the size.
