A small bistro tucked into a quiet square near the old city center, where the menu annotates each dish with its origin, Peru, Colombia, Galicia, the Basque Country, as if the kitchen keeps a passport. The Peruvian chef pulls in lesser-known fish from the local auction and folds in flavors gathered from wider travels. A Michelin Bib Gourmand, and small enough that a reservation is less a suggestion than a requirement.
