Skewers turning over fire at the edge of Borough Market, just below sister restaurant OMA, and the flatbreads come out of the oven so puffed they look briefly architectural. This is a souvla bar, which means the menu is short, the cooking is stripped back, and the slow-roast pork souvlaki does most of the heavy lifting. The Michelin Guide gave it a Bib Gourmand. Book ahead or arrive right at midday, because the room fills fast and the bookings are few.
