A Japanese restaurant on the third floor in Akasaka, named for the neighborhood's older, more poetic identity as Red Hill. The chef grew up eating vegetables from his parents' garden in Yamagata, and the menu is essentially an ongoing tribute to that, with deep-fried tofu lifting those same seasonal vegetables and kombu repurposed from the soup stock into a soy sauce for sashimi. Thrift and sentiment, working together quietly.
