The menu at this Italian restaurant in Shirokane changes not by whim but by compass: southern fish and olive oil dishes run through summer, then the kitchen pivots north come autumn, leaning into mushrooms and braised game. The chef mapped those regions personally, and the seasonal logic is tight enough that returning twice in one year feels like two different restaurants. A Michelin Bib Gourmand, and a genuinely useful one.
