    The name is a statement of intent: French cooking as something the chef refuses to fit into a tidy box. Housed in a former neighborhood workshop in Shirokane, this intimate restaurant builds on classical French technique before folding in Japanese and Chinese culinary traditions. The room still carries a handmade, slightly unconventional feel, which suits a chef who spent time in France absorbing Gallic freedom and came home determined to use it.
