The chef is Japanese with a deep devotion to French technique, and the menu lands somewhere genuinely its own, pâté en croûte alongside yuzu, miso alongside seasonal French produce. The room is intimate, the cooking precise, and the whole thing reads less like fusion than like one cook following his instincts wherever they lead.
