This vegan restaurant in the East Village brings a real polish to plant-based cooking, with dishes assembled like small arguments for taking the cuisine seriously. The menu occasionally wanders into paella and mole territory, which is a choice. It's a Michelin Selected spot, and the kind of room where nobody misses the meat.
