  1. Vintage Vegas glamour gets a quiet update at this steakhouse inside the Circa Resort, where the chef behind Scotch 80 Prime brings a recognizable hand to the Downtown corridor. The menu runs classic prime cuts but keeps slipping in detours: lobster and shrimp potstickers, short rib with harissa, tater tots finished with poutine gravy. The crowd skews loyal, the kind who followed the chef here from his last room and haven't opened the menu in months.
