    Dried leaves hang from the ceiling at this lively Amstelveen bistro, which somehow reads more Provençal than Dutch. Grab a seat at the long bar and order from a compact à la carte of French classics in smaller portions, with the occasional Asian detour keeping things from feeling too predictable. The steak tartare hand-cut, the crab remoulade with crispy toast, the kind of menu where you know what you're getting and that's entirely the point.
