The sixty-foot vaulted ceilings of St Pancras's old booking hall are now a cocktail bar, which means you're drinking under gothic ironwork built to sell train tickets to the Victorians. The drinks lean into that: the menu is built around Victorian-era recipes and English ingredients, the kind of concept that could easily be too clever, but the room is so genuinely cathedral-scale that the theme disappears into the architecture.
