A wine cellar stocked with over 1,500 references at reasonable prices is already a good sign, and the kitchen backs it up. This Lyon bistro near the Célestins Theatre runs a menu that reads like a regional greatest-hits: house terrine, calf's sweetbread vol-au-vent, and rotisserie joints of Bresse poultry carved tableside. It's the kind of old-school Lyonnais cooking that doesn't need explaining, just ordering.
