Cave houses carved into Santorini's volcanic cliffs have been repurposed since the 1980s, and this boutique hotel in Oia is where that particular story started. Four levels of whitewashed Cycladic rooms step down the caldera face, each with a private veranda and views that make it genuinely difficult to leave. An infinity pool with half-submerged loungers faces the sea, and the on-site restaurant is timed, not accidentally, to catch the sunset.
