A 12th-century Arabic wall runs through the restaurant of this boutique hotel in Valencia's Old Town, which was a Gothic palace long before anyone thought to put a plunge pool on the terrace. The Michelin Guide awarded it a Key. Guest rooms keep the medieval coffered ceilings and Moorish archways, then wrap them in monochromatic, gallery-spare decor that somehow makes the stonework feel more dramatic, not less.
