Tucked into castle grounds in tiny Fürstenau, this restaurant from Andreas Caminada keeps things rooted in Graubünden, where the regional produce tends to upstage everything around it. The room has high ceilings, warm wood, and a terrace that makes you forget you had other plans. Country cooking is the register, seasonal and local, with Graubünden classics alongside whatever the kitchen's suppliers turned up that week. The in-house bakery next door is worth a detour on the way out.
