  1. One kitchen has a comal turning heirloom Oaxacan corn into tortillas; another steams dumplings. José Andrés planted this casual restaurant inside The Cosmopolitan on the premise that Chinese and Mexican cuisines belong together, and the menu doesn't argue the point so much as demonstrate it with antojitos, dim sum, noodles, and ceviche sharing the same table. The Michelin Guide awarded it a Bib Gourmand, which tracks for a room that eats this well without the formality.
