  1. Rice cooked in earthenware bowls, served in stages from just-underdone to fully steamed so you can follow the flavour as it shifts, is the whole point here. This small breakfast spot in Higashiyama takes its name from a Zen idea about the joyful mind a cook should bring to a meal. The menu is a traditional Japanese breakfast, rice and soup with pickled vegetables and herring, kept spare on purpose. It holds a Michelin Bib Gourmand.
