It's a coal-fired pizza spot on West Grand where the 800-degree oven does the heavy lifting, producing thin, blistered crusts with those charred edges that take years of patience to fake. The open kitchen keeps pie production visible from anywhere in the snug dining room, and the Michelin Guide has taken notice.
