Fire does most of the work at this modern restaurant inside boutique hotel The Largo, where an open kitchen anchors a room designed so every table faces the cooking. Nuno Mendes leads the kitchen through a menu that leans on northern Portuguese tradition without being enslaved to it, letting seasonal ingredients and live flame carry the argument. The savoury pastel de nata with turnip cream and caviar makes the point quietly.
