Oaxacan
Dinner here happens under a canopy of Edison bulbs and actual trees, with candles on the wood tables and incense in the air, all of it concrete and calm inside a UNESCO heritage guest house. Enrique Olvera is a name worth knowing, and he and chef Luis Arellano run a tasting menu rooted in traditional Oaxacan recipes and local ingredients. The birds are not ambient sound; they live here.
