  1. Manon Fleury has written a whole book on grains, and you can taste the obsession at this Michelin-starred fine dining room in the Marais. The cooking is almost entirely plant-based, with animal protein appearing rarely enough to feel like a guest. Vegetables, fruit, grains, and careful sourcing from short local chains do the heavy lifting, and the waxed concrete and velvet banquettes keep things grounded. Book well ahead.
