A red-tiled floor and low raftered ceiling set the scene in this old fisherman's cottage turned Belgian restaurant on the coast at Koksijde. The kitchen leans into the seasons and the sea, shelling its own shrimps and sourcing with the kind of care that makes the sourcing invisible. Sole poached in shrimp with a Riesling butter is the sort of dish that answers questions you didn't know you had. Service runs smoothly enough that you never notice it working.
