The omakase opens with a wafer sandwich of foie gras and miso, which sets the tone for what Den is doing: Japanese fine dining that refuses to be solemn about itself. Two Michelin stars and a spot on the World's 50 Best lists, and the room still runs on actual warmth rather than ceremony. The chef's whole project seems to be making sure you leave having had fun, and it works.
