A tonkatsu shop in Jingumae where the chef fries named-breed pork in lard kept at a lower temperature than usual, which gives the crust that rare quality of being crisp without being loud about it. Rice comes out of clay pots and into wooden tubs, a two-step process that keeps it light and a little sweet. The chicken cutlet earns a mention too, which makes sense once you know the chef also runs a yakitori place. Michelin Bib Gourmand.
