Thirty-eight floors above Toronto Harbour, this fine-dining room does Modern Italian without the baroque excess, letting clean Mediterranean technique do the work. The tasting menu is the move, with pasta given the same seriousness as anything else on the plate. A Michelin star and a spot on the 50 Top Italy world list follow from somewhere, and the room knows it, carrying itself with a professionalism that feels earned rather than performed.
