    An all-white dining room inside the Hotel Arts, designed with the kind of meticulous calm that makes you lower your voice without being asked. Paco Pérez holds two Michelin stars here for Mediterranean cooking that leans on sea cucumbers from the Mar d'Amunt and produce with a faint coastal salinity, quietly arguing that local ingredients can carry a fine-dining menu further than invention alone. Dress accordingly.
