Fermented potato bread and a US rap soundtrack inside an 1895 warehouse: this is a creative tasting-menu restaurant from a locally known Californian chef, and it holds a Michelin star. Terrazzo floors, graffitied walls, and rows of fermenting jars in the open kitchen set the mood. The cooking draws from organic, regenerative farms and treats every part of every ingredient as fair game, which sounds like a manifesto until the food arrives.
