A former glass factory in central Bilbao still shows its bones, and Fernando Canales has kept enough of the industrial shell to make the elegant dining room feel earned rather than decorated. It's a tasting-menu restaurant, two menus deep into creative Basque cooking, where the chef apparently surfs before service each morning and seems to mean it as a philosophy, not a brag. The food follows the same logic: precise, but willing to move with the current.
