A Japanese chef and his front-of-house partner run this quietly stylish bistro near Square Maurice Gardette, where the walls read "work in progress" in sand and ochre and the cooking reads nothing of the sort. The menu moves with the moment, technically precise but loose enough to feel personal. Dinner shifts into something a little more considered than lunch. The wine list gets attention too, which in the 11th is saying something.
