Basque
The name means "lime tree" in Basque, and the terrace beneath one is where you want to be on a warm evening. This is a small, intimate restaurant inside a traditional stone house in the village of Bidart, run by a couple who came up through Michel Guérard's kitchen. The menu moves with the seasons, leaning on local Basque producers: farm pig, line-caught tuna, black cherry, aged farmhouse cheese. Unhurried and quietly refined.
