Fallow is a Modern British restaurant in St James's Market built around a whole-animal, low-waste philosophy, with produce from the chefs' own smallholding near Esher and mushrooms grown on-site. The open kitchen counter dominates the room, the crowd is loud, and the cod's head in sriracha butter is the dish people come back for.
