Dan Barber's Greenwich Village dining room runs a single fixed menu, served family-style, that arrives at the table with almost no interference from the kitchen. Vegetables from Blue Hill at Stone Barns upstate carry most of the meal, with grains and proteins woven in to support rather than star. It holds a Michelin star, and the room has the kind of quiet confidence that comes from a team that has stopped needing to prove anything.
