Hardwood floors, white walls, and bevelled mirrors give this Michelin-starred dining room in the 17th the feel of a well-kept Parisian apartment, which is apparently the point. The chef trained at Ledoyen, Le Meurice, and with Robuchon before earning his Meilleur Ouvrier de France, and the tasting menus carry that pedigree quietly, with sauces and reductions that tend to stop conversation mid-sentence.
