A sushi counter in Higashiazabu where you order nigiri one piece at a time, in whatever order you please. The chef polishes the rice just before cooking, which is the kind of detail that separates the obsessives from the rest. Small dishes and sake round things out, but dropping in for a single piece is genuinely encouraged, no ceremony required. Old-school and unapologetic about it.
