A second-floor French restaurant in Shirokanedai where the menu reads like a thank-you note, listing each ingredient's origin and the producer behind it. The chef comes to the table with every dish to explain the thinking, which sounds fussy until it isn't. Bread and tea come from the chef's home prefecture of Shizuoka, baked by a classmate, which gives the whole room a quiet, personal logic that most tasting menus only pretend to have.
