A one-Michelin-star tempura counter tucked into a basement in Shirokanedai, where the chef works in near silence, listening to the sound of the oil the way a musician listens for a note going flat. High heat, adjusted constantly, pulls moisture out and concentrates flavor. No creative flourishes, just whatever is in season dropped into batter and made to taste more like itself. The room, built by a traditional Japanese tea-house carpenter, is quietly beautiful.
