The menu announces its intentions plainly: "traditional French bourgeois cuisine." This family-run bistro in Toulouse has been doing exactly that for ages, and the cassoulet, a proper, slow-cooked assembly of lingot beans, Toulouse sausage, duck confit, and pork in several forms, reportedly took a city title in 2023. The wine list leans southwest, the service is warm, and you can buy a jar of the cassoulet on your way out, which feels like cheating and also very sensible.
