    Grilled Pork Korean

    Pork butt cured for two weeks, then grilled fast over binchotan on a custom aluminum grate, is the whole point of this Korean barbecue spot near Sinsa station. The meat comes out fatty and yielding, and the move is to eat it the way the menu suggests, over rice that drinks up the juices and softens into something else entirely. The side dishes hold their own too. A Michelin Bib Gourmand, if that helps with the table reservation math.
