A fire door at the top of a forlorn back staircase opens into a candlelit gin bar so small that twelve people is a squeeze. Hidden above the Portobello Star, the Ginstitute is part specialist bar, part gin museum, with a three-stool mahogany counter and a still room where you can blend your own bottle. No natural light, no fuss, no room for anyone to pretend they're just passing through.
