Soup served inside the turban shell it came from is a reasonable encapsulation of what this two-Michelin-star kaiseki restaurant is doing. The chef grew up between the mountains and the sea of Tohoku, and that geography shows up on the plate: crab baked in its own shell, hot pots that are simultaneously bracing and refined. The kitchen uses very few ingredients and somehow makes you remember every single one.
