    Handmade pasta built from a family recipe is the whole argument here, and a Piedmontese chef making it in Madrid gives the room a quietly confident feel. Gioia is a small Italian restaurant where the menu runs à la carte or a tasting menu that riffs on the overlap between Italian and Spanish cooking. Truffle turns up often, and the tagliatelle made with forty egg yolks is the dish regulars tend to mention unprompted.
