Claus Meyer, the co-founder of Noma, opened this fine-dining restaurant with an explicit mission: put Bolivia on the culinary map and build the local food economy while doing it. The kitchen is now in Bolivian hands, and the team mines a native pantry that runs from the Andes to the Amazon, much of it unfamiliar even to locals. Go à la carte or surrender to the tasting menu, paired with cocktails and wine that hold their own.
