    Hatsu Udon is a no-frills udon canteen in Grangetown, where the kitchen faces a counter built for solo lunches and nobody is lingering over wine. The noodles are handmade, soft and springy, and the tempura prawn keeps its crunch even after a dunk in the broth, which feels like a minor loophole in physics. Homesick Hongkongers, students, and locals share the room, and the tomato beef udon is a comfort bowl for all of them.
