    A saltwater pool carved into the rockface above the Mediterranean is a fairly confident statement for a hotel to make, and Hotel du Cap-Eden-Roc backs it up across 22 acres of pine-shaded peninsula at the far tip of Cap d'Antibes. The rooms look more or less as Fitzgerald would have left them, which is either atmospheric or demanding, depending on your tolerance for grandeur. Forbes Five Star and Michelin 3 Keys.
