On the fifth floor of the Bulgari hotel, with a terrace overlooking the Mausoleum of Augustus, this fine dining room is where three-Michelin-star chef Niko Romito runs an outpost built around his signature idea: that classic Italian dishes get more interesting when you strip them back rather than build them up. Spaghetti al pomodoro, artichoke soup, saffron risotto, all treated with a kind of rigorous restraint. Stop at the bar on your way in and order something cold.
