The family drew the water for the white miso zoni from a well on the premises, and they still do. This is a multi-generation kaiseki restaurant that holds three Michelin stars, and the lineage runs deep enough that the current chef learned the craft standing next to his father. Sake-grilled tilefish gets doused in sake again and again until the flavor stacks. The kitchen now runs with the chef's son, who trained abroad, keeping the continuity intact.
