  1. The 16-seat counter in Tribeca runs loud for an omakase room, which is part of the point. The team behind ITO has no patience for hushed reverence: fish flown in from Tokyo and Fukuoka anchors a nigiri progression with deep cuts and assertive saucing, and the appetizers and desserts pull their weight too. Whiskey and sake flow, the room skews young, and everyone booked their next reservation before the first one ended.
