Jiki Miyazawa is a kappo restaurant in Nakagyo-ku, the original of a small Kyoto chain, and the chef brings a quietly unexpected thread from his time cooking at a Polish ambassadorial residence. Dishes layer ingredients with citrus and fruit acidity doing a lot of work. Seasonal soba rounds things out when the moment is right.
